CHICKPEA AND SPINACH CURRY Gluten and dairy free

WHAT YOU WILL NEED:

1 tablespoon ghee

1 onion

2 cloves

Knob of ginger

4 tomatoes

Can chickpeas

2 handfuls of spinach

1 teaspoon cumin seeds

1 teaspoon coriander

1 teaspoon turmeric

1 teaspoon chili

1 cup water

Salt and pepper

Handful coriander

THE HOW-TO PART:

  1. Chop onion and put in pot with ghee. Cook 4-5 minutes
  2. Add herbs and spices and stir.
  3. Add tomatoes, water and chickpeas
  4. Cook 10 minutes then add spinach and coriander just before serving

SECRETS FROM MAMA RAE’S KITCHEN:

  1. You can saute the onion in a tablespoon of coconut oil
  2. Substitute any other bean for the chickpeas.
